@crazygrower they stick their hand in where the catfish is hiding and it bites them in a defense and/or feeding response. Catfish will eat just about anything... this method is called "noodling".. Of course there could just as easily be a snapping turtle or cottonmouth in those holes. Its really only for those who don't value their digits.

@fupasack2 lol i used a bamboo stick, a string, and chicken liver to catch cats like that when i was young... I was too small to noodle + i dont like the idea of getting bitten by a cotton mouth.
